Disney Food Friday: The Making of a Minnie Mouse Candy Apple Tutorial

Whenever we are in Disney Springs a must do is Goofy's Candy Company. While browsing the cases laden with delicious sweet treats and stuffing by-the-pound bags to take home we enjoy watching the bakers making confectioneries in the show kitchen. Making candy apples for your #DisneySide @HomeCelebration would have the kids (big and small) squealing with delight. It's a great way bring back happy memories of Walt Disney World.

Here's a yummy tutorial from the Disney Park Blog: Making Minnie Mouse Candy Apples at Marceline's Confectionary that I'm going to try to follow when I make mine.

Ingredients:
An apple on a stick

caramel 
marshmallows 
melted milk chocolate 
melted white chocolate 
an edible red bow (red licorice would work at home)
red sugar

white chocolate dots

Foodie Friday: Terra

Our Favorite Foods This Week were located at Epcot's Food & Wine Festival. Just as we entered the World Showcase there was Terra with a fabulously healthy vegetarian menu ready for us to taste. Peter chose the Trick'n Chick'n Curry with Basmati Rice featuring Gardein Chick'n Breast for $3.75 (1 DP snack credit) and I chose Chili Colorado with Home-Made Chips  and Cashew Cheese featuring Gardein Beefless Tips for $3.75 (1 DP snack credit). We shared each dish. Both were incredibly flavorful and filling. I passed on the Paul Dolan Sauvignon Blanc wine for water. Too hot and sunny for wine tasting on that day. I'd get back to it later in the week.

Disney Foodie Fare ~ Tonga Toast

It's Foodie Fare Friday and we're focused on the magic of a Disney recipe from The Polynesian's Kona Cafe at The Walt Disney World Resort. 
When I think of The Kona Cafe I think of their coffee, it is the best authentic Kona Coffee and the famous Tonga Toast. 

Warning! If you choose the Tonga Toast, you better be hungry. It is very filling! There are more than enough carbs to last you awhile and you may have a sugar rush. I like to split Tonga Toast with my husband or son. Even splitting one serving will hold me over till lunch time and more.


Kona Cafe is not the only restaurant on property that offers Tonga Toast. The Rainforest Cafe has it on their menu but from what I've heard it doesn't come close to the Kona Cafe recipe. 
The recipe below is very easy to follow and I've included a video that I wish had a scratch and sniff button because it looks like it smells delicious.

What's New for the 17th Annual Epcot International Food & Wine Festival

Excitement is building for the Epcot's 17th Annual Food & Wine Festival and all the new taste treats that will be introduced. My friends at Disney Park InsidEARS shared some great news.

The Epcot International Food & Wine Festival was named by the Travel Channel as one of the country’s top food and wine festivals.
Chefs are cooking up fantastic new experiences for this year’s fest, which open September 28 and runs for a record 46 days through November 12.

There’s no better setting for noshing, sipping and wandering than Epcot’s World Showcase, with a one-of-a-kind backdrop of architectural icons from around the globe.

Rainforest Cafe ~ Rasta Pasta Recipe

You will find numerous Foodie Fare finds for lunch in Walt Disney WorldOne that offers an escape from the heat and excitement of the parks and is almost an attraction by itself is The Rainforest Cafe.

This is a fun and easy going recipe from The Rainforest Cafe that reminds me so much of those relaxed laid back meals we've enjoyed there many times.





It tastes much better than it looks:)



Rainforest Cafe ~ Rasta Pasta

Ingredients:

8 oz Farfalle (bowtie) pasta
1 t. chopped garlic
2 T. olive oil
1 C. chopped fresh spinach
1 C. broccoli florets
1 medium red pepper, roasted
1 C. grilled chicken, sliced into 1/2" pieces
1 C. prepared Alfredo sauce
1/8 C. prepared basil pesto sauce
1 t. Italian seasoning
2 T. shredded Parmesan cheese



Prepare:
Cook pasta according to package directions. Drain well and set aside. 
In a 12" saute pan, saute garlic in oil. 
Add spinach, broccoli, green pepper and grilled chicken. Toss to combine. 
Stir in Alfredo and pesto sauces. Simmer for 5 min. 
Reheat pasta if necessary. 
Pour pasta into bowl and top with vegetable/sauce mixture. 
Sprinkle with  Italian seasoning and Parmesan cheese.

Virtual Food & Wine Festival ~ Germany




Welcome to The Virtual Food & Wine Festival. In honor of Epcot's International Food & Wine Festival a few Disney bloggers have gathered together their special culinary talents and prepared a virtual F&W Festival!

During the Food and Wine festival each fall, the number of snack offerings around the World Showcase is dizzying. One of our all time favorites is the Apple Strudel from Germany served with Karamel Sauce and Vanilla Sauce.

My MIL always made the best strudel and she encouraged me to try making it myself. Her recipe included making the dough from scratch, which was way beyond my abilities. Well, very sadly my MIL passed away a year ago. In her memory and my husband's prodding, I decided to give Apple Strudel a try. It also helped that I found a fabulous recipe in The Cooking With Mickey Volume II from Caffe Villa Verde in the Disneyland Hotel using filo dough. 



Apple Strudel with Filo Dough


Yield: 1 strudel
Preheat oven to 400º


Ingredients:


1 pound apples, thinly sliced
1/3 cup sugar
1/2 teaspoon cinnamon, ground
5 sheets filo dough
1/2 cup butter, melted
Whipped cream or custard sauce
*optional ingredients:
1/4 cup raisins or cranberries
1/2 teaspoon Apple Pie Spice


Peel and core fresh apples. Cut each into wedges, then into thin slices.
 


Combine cinnamon and sugar. Sprinkle with two thirds of the cinnamon and sugar mixture and mix lightly. Mix in Apple Pie Spice and cranberries or raisins. Set aside.


On a clean kitchen towel, put a single layer of filo dough. Brush with melted butter.
Place another sheet of dough on top and repeat, until all five have been layered with butter.
Keep filo dough under a moist kitchen towel after the package is opened and while working.
Place apple mixture on upper third of filo dough layers.
Sprinkle with remaining cinnamon and sugar mixture and roll dough, using the kitchen towel to lift the dough as tightly as possible around the apples.



Place rolled dough, seam side down on a buttered baking sheet and brush with remaining butter. Sprinkle lightly with cinnamon and sugar on the top of the roll.



Bake for 30 minutes or until golden brown.
Serve hot with whipped cream or custard sauce.

Kitchen Notes: Using cranberries was too tart. Raisins would have been better. A baking mat or parchment paper was essential, as cleaning up the caramelized sugar would have been awful if not impossible. This recipe made two strudels. If the filo leaves were wider it might make one strudel but may have been more difficult to roll. I used my Mickey kitchen towel with a waffle texture. Next time I'll use a pastry cloth to roll the dough. It would absorb less and might give me a tighter, better-looking roll. 


The strudel was a huge hit in my house and I'm so glad I finally tried it. I even made another one after this as a special birthday request. DS gave me the ultimate compliment when he said,
It tasted like it was fresh from Grandma's kitchen.

Princess Rapunzel's Tea Party

All The Princesses are so excited to have Rapunzel enter the Royal Court as the 10th Disney Princess and we thought it would be fun to have a tea party in her honor!
Besides, we just love to have themed tea parties for holidays, birthdays and even an unbirthday.

Snow White has put down her tiara to prepare a most magical and tasty Gooseberry pie for The Princess Tea Party.

Thanks to her work as a scullery servant in her stepmother's castle, Snow White is quite knowledgeable about cooking, particularly pies. As you may recall, Gooseberry pie was a favorite amoung the dwarves. It was the wicked witch who turned her against making it by suggesting apple pie instead.
Queen: All alone, my pet?
Snow White: Why... why, yes, I am, but...
Queen: The... the little men are not here?
Snow White: No, they're not, but...
Queen: [Sniffing] Mm-hmm. Baking pies?
Snow White: Yes, gooseberry pie.
Queen: It's apple pies that make the menfolks' mouths water. Pies made from apples like these. Snow White: Oh, they do look delicious.
Queen: Yes, but wait 'til you taste one, dearie. Like to try one? Go on. Go on, have a bite.

Snow White's Gooseberry & Mixed Fruit Pie 

Preheat oven to 300º degrees.

Pie Crust Dough:
3 ½ cups all purpose flour
2 tablespoons sugar
1 teaspoon salt
2 sticks unsalted butter cut into ¼ inch pieces
4 tablespoons Crisco (or substitute: margarine (1 cup shortening = 1 cup + 2 tablespoons margarine)
Sift the flour, sugar, and salt into a large bowl. Using your fingers 
(I cut it in with a pastry knife) work in the butter and shortening until the mixture resembles coarse crumbs. Add 2 tablespoons ice water and work with your fingers until the water is incorporated and the dough comes together. Add more water if needed.

Spray the inside of a 9x13x2 inch glass or ceramic baking dish with a 
non-stick coating (I use Baker's Joy). Roll out pie dough on a lightly floured surface (I use a cold marble slab) and line the baking dish with dough (as for an apple pie)

Gooseberry/Mixed Berry Filling:
2  cups gooseberries (fresh or 1 can drained)
3 cups frozen (don't thaw) mixed berries
½ cup Sugar
1 ½ cups Brown sugar
½ teaspoon Nutmeg – ground
1/4 teaspoons ground cinnamon
½ cup Flour
1 egg beaten
Sift dry ingredients together. Combine egg, with dry mixture. Stir in gooseberries and mixed berries. Pour into pastry lined 9 inch pie pan. Cover with top crust, crimp edges and prick with fork. Brush with milk and sprinkle with sugar. Bake at 425 degrees for 35 to 40 minutes, or until crust is golden brown.

The pie must cool for at least an hour to get a good cut on each slice. Alas, Snow White was so excited about Rapunzel's welcoming that her most magical Gooseberry pie didn't turn out quite as planned. No matter, tish-tosh the Magical Gooseberry Blend tea is delicious.
