Yachtsman Steakhouse at Disney’s Yacht and Beach Club Resorts. Yachtsman Steakhouse is a Family-Friendly Signature Dining experience that serves up the most mouthwatering steaks and fish dinners. 
This recipe is one way I like to bring the magic of Disney into our home. I save the Grand Marnier version for special occasions. It's still delicious and everyone raves about it.

The Virtual Food & Wine Festival ~ France

Bonjour!
Welcome to The Virtual Food & Wine Festival. In honor of Epcot's International Food & Wine Festival we have joined together with a great group of Disney Bloggers for a Virtual Food and Wine Festival!
You're all invited to virtually eat your way around the World Showcase!

One country that always stands out in my mind when sampling pastries in the World Showcase is France. Making pastries at home is a challenge for me but I've found a recipe that's easy and delicious from Disneyland's Club 33′s, the Pumpkin Beignets. The hardest part was waiting for them to cook. These tasty beignets filled with fall flavor are now my families favorite and will surely be yours too. We enjoyed them right after picking our homegrown pumpkins which you can almost see in the picture above. A taste of France and homegrown fun made for a perfect autumn weekend.
Here's what you'll need to get started. Chef Duffy is an optional ingredient. He's our Virtual Food & Wine Festival mascot. Chef Duffy has helped us create recipes from around Epcot's Word Showcase, Germany and Greece . But, don't go there now. This week’s featured foodie favorite is my husbands dessert of choice at Le Cellier in the World Showcase at Epcot. Le Cellier is our go-to restaurant for a romantic couples dinner. We can count on it as being a fabulous meal and the Maple Creme Brulee is the perfect sweet ending. My review: Dinner for Two at Le Cellier
This recipe isn't too complicated and would be fun for a special dinner or your next party. I might make it for my #DisneySideDisney Home celebration.

Disney Food Friday: The Making of a Minnie Mouse Candy Apple Tutorial

Whenever we are in Disney Springs a must do is Goofy's Candy Company. While browsing the cases laden with delicious sweet treats and stuffing by-the-pound bags to take home we enjoy watching the bakers making confectioneries in the show kitchen. Making candy apples for your #DisneySide @HomeCelebration would have the kids (big and small) squealing with delight. It's a great way bring back happy memories of Walt Disney World.

Here's a yummy tutorial from the Disney Park Blog: Making Minnie Mouse Candy Apples at Marceline's Confectionary that I'm going to try to follow when I make mine.

Boma’s Papaya, Avocado, and Grapefruit Salad Recipe from Disney's Animal Kingdom Lodge

From the scenic terraces of Epcot to the jungles of Disney’s Animal Kingdom, Walt Disney World has a wide selection of places to dine alfresco. But if you can't be in Disney to dine alfresco you can still enjoy Boma’s Papaya, Avocado, and Grapefruit Salad Recipe at home in your own backyard.

Walt Disney's Own Chili Recipe

Walt’s own recipe for this fabulous family favorite! Perfect one dish meal for a get-together or Disney movie night.

Our family enjoys this recipe with a few modifications. I skip the extra pepper zing in the zest. That's our family, yours may enjoy it with all the zestiness.


Ingredients:
• 2 lbs. coarse ground beef
• 2 onions, sliced
• 2 cloves garlic
• 1/2 cup oil
• 1 cup chopped celery
• 1 tsp. chili powder (depending on taste)
• 1 tsp. paprika
• 1 tsp. dry mustard
• 1 large can solid pack tomatoes
• 2 lbs. dry pink beans
• salt   

For a little extra zest:

Add a pinch of the following spices:
• 1 little yellow Mexican chili pepper
• Coriander seeds
• Turmeric
• Chili seeds
• Cumin seeds
• Fennel seeds
• Cloves
• Cinnamon
• Dry ginger

Method for Preparation:

  • Soak beans overnight in cold water. 
  • Drain, add water to cover (2 inches over beans), and simmer with onions until tender (about 4 hours). 
  • Meanwhile, prepare sauce by browning meat and minced garlic in oil. 
  • Add remaining ingredients, and simmer for 1 hour. 
  • When beans are tender, add sauce to beans and simmer for 1/2 hour. 

Serves 6 to 8.

BoardWalk Bakery Peanut Butter-Banana-Applewood Smoked Candied Bacon Pie Recipe

In just a few days we'll be relaxing at the BoardWalk Villas. I'm looking forward to exploring the BoardWalk Bakery. Can you tell I'm excited? The BoardWalk Bakery is my favorite bakery on property. I've written about it often, most recently here. Peter is anxious to do the morning "bun run", a family tradition when we stay at The BoardWalk Villas.


“The bakery is themed to the 1920s Jersey shore,” says John Berko, manager of food & beverage at Disney’s BoardWalk Inn and Villas. Dark wood and colorful tiles and mosaics add a new brightness to the space.
Menu items include hot breakfast items, salads and sandwiches galore. One of the new items on the menu is Peanut Butter-Banana-Applewood Smoked Candied Bacon Pie. This sounds delicious, combing sweet and salty goodness in a pie.

The bakery is open daily from 6:30 a.m. to 11 p.m., and is Disney Dining Plan eligible.



Peanut Butter-Banana-Applewood Smoked Candied Bacon PiePeanut Butter-Banana-Applewood Smoked Candied Bacon Pie
Makes 9-inch pie 3 thick slices applewood smoked bacon
1/4 cup brown sugar
9-inch store-bought chocolate graham cracker pie crust
1 cup peanut butter
1 cup cream cheese
2 tablespoons sugar
1 cup whipping cream
2 bananas, sliced
Preheat oven to 375°F. Line a small baking sheet with parchment paper, and place a wire rack over the baking
sheet.
Coat bacon on both sides with brown sugar. Place on rack and bake 20 to 30 minutes, or until crispy, depending on thickness of bacon.
Remove from oven. Once cooled, dice and set aside.
Cream together peanut butter, cream cheese, and sugar until smooth.
Whip cream to soft peaks in a separate bowl; gently fold into peanut butter mixture.
Fill pie shell halfway with mixture, then evenly top with banana slices. Top slices with remaining mixture.
Sprinkle with chopped bacon. Refrigerate until ready to serve.

Crispy Savanna Spring Rolls Recipe


On our next great foodie adventure in Walt Disney World I plan on a return visit to Jiko - The Cooking Place at Disney's Animal Kingdom Lodge. I am so looking forward to  the Crispy Savanna Spring Rolls with Curry Vinaigrette. I just hope it's back on the menu.

Since this month we'll be talking a lot about one of my favorite parks, Disney's Animal Kingdom and it is another fabulous Foodie Friday I thought I'd share the recipe. 


Crispy Savanna Springs and Curry Vinaigrette. SPRING ROLLS
1 tablespoon olive oil
1⁄4 cup diced yellow onion
1 teaspoon minced garlic
2 cups fresh corn
2 cups firmly packed mixed baby lettuce
1⁄2 teaspoon coarse salt
1⁄4 teaspoon ground black pepper
1⁄2 cup soft goat cheese
4 (8-inch-square) frozen spring roll pastry wrappers made with wheat flour, thawed
1 egg yolk, lightly beaten

Vegetable oil, for frying

Preparation:
Heat oil in a sauté pan over medium-high heat and add onions. Cook for 3 minutes, until softened, then add garlic; sauté 2 to 3 minutes.
Add corn and sauté for 4 to 5 minutes, until corn is tender.

Add lettuce and cook for 3 minutes, until wilted. Add salt and pepper. Set aside to cool for 5 minutes. Add goat cheese and stir until well combined.

Cut wrappers in half diagonally, forming two triangles. With the long side of one triangle nearest you, put 2 tablespoons filling along middle of long edge of triangle and shape filling into a thin log. Fold left and right corners of wrapper over filling, overlapping slightly. Dab top corner with egg yolk, then roll up wrapper away from you into a long thin roll, making sure ends and filling stay tucked inside. Place on a tray, seam side down. Repeat with remaining wrappers and filling, keeping tray of rolls loosely covered until ready to fry.

Heat 11⁄2 inches of oil in a heavy-bottom stockpot over medium-high heat until it reaches 365 degrees. Working in batches, fry rolls for 4 to 5 minutes, until golden brown and crisp.

CURRY VINAIGRETTE
1⁄2 cup safflower oil
1⁄4 cup rice vinegar
2 teaspoons lemon juice
2 teaspoons sambal olek (Asian chili paste)
2 teaspoons honey
1 clove garlic, minced
1⁄4 teaspoon curry powder
2 teaspoons finely chopped fresh dill

Preparation:
Place oil, vinegar, lemon juice, sambal olek, honey, garlic and curry powder in a blender. Process until smooth. Add dill, and stir to combine. Serve vinaigrette with Crispy Savanna Rolls.
Makes 8.

Super ESPN Zone Spinach and Artichoke Dip

To be honest, I am not enthusiastic about the Super Bowl this year. I'll be watching for the commercials, the halftime show and who's going to Disney World
While everyone in the house is hootin' and hollerin', I'll be in the kitchen putting a few new recipes to the test. Big Game days are always a good time to try new recipes. This Spinach and Artichoke Dip recipe from The ESPN Zone in the Downtown District at the Disneyland Resort will be a big hit I'm sure and a fan favorite.

Disney Recipe ESPN Spinach Artichoke Dip


 Serve with carrot and celery sticks or chips. I'll be serving it with Sweet Potato and Tortilla Chips.
Spinach and Artichoke Dip
Makes 8 cups
4 tablespoons (1/2 stick) butter
1/4 cup diced onion
3 cloves garlic, minced
1/4 cup all-purpose flour
1 cup heavy cream
2 cups whole or 2% milk
1/8 teaspoon white pepper
2 1/2 cups grated Parmesan cheese
1 teaspoon coarse salt
1 teaspoon freshly ground black pepper
2 teaspoons Worcestershire sauce
2 teaspoons hot sauce, such as Tabasco
8-ounce package cream cheese, cut into cubes and softened
2 1/2 (10-ounce) boxes frozen chopped spinach, thawed and squeezed dry
2 (14.5-ounce) cans quartered artichoke hearts, drained
1 cup shredded mozzarella
Tortilla chips, carrot and celery sticks, garlic bread, for serving
  1. Preheat oven to 350°F.
  2. Melt butter in a large stockpot over medium heat. Add onions and garlic and sauté 2 minutes.
  3. Add flour; cook for 4 minutes, stirring constantly. Slowly whisk in cream and milk, then bring to simmer, whisking often until sauce is thick and coats the back of a spoon.
  4. Add white pepper and Parmesan, stirring until well incorporated. Remove from heat. Add salt, pepper, Worcestershire, and hot sauce. Mix well.
  5. Fold in cream cheese, stirring well until cream cheese is completely incorporated. Add spinach, stirring to combine. Add artichoke hearts, stirring gently so as not to break up the artichokes.
  6. Pour mixture into a 9×9-inch baking dish and sprinkle mozzarella evenly on top.
  7. Bake 15 minutes, or until cheese on top is completely melted and bubbling.
  8. Serve hot with tortilla chips, carrot and celery sticks, and/or garlic bread.

Disney Magic at Home

This is such a fun topic! There are so many ways I keep the Disney magic alive at home. Narrowing it down was tough for me because it really has become my lifestyle to include Disney music, clothes, movies, even my morning coffee in a favorite Disney mug  keeps me focused on the magic. 

If I had to choose just one for today, it would be cooking. I bet you were all thinking I would say photography, and you would be right but I also really enjoy food, cooking it, eating it and photographing it.

Boma ~ African Fruit Fool Recipe


I'm dreaming about our next great foodie adventure coming up at Boma in Disney's Animal Kingdom Lodge. Boma is located on the first floor of Jambo House serving breakfast and dinner daily in a 270 seat restaurant. The theme is designed to resemble an African marketplace with chefs attending wood burning grills and rotisseries.
Boma is a buffet with pods (serving stations) that offer exotic dishes from over 50 different African countries. It is 1T on the Disney dining plan.


African Fruit Fool is a refreshing dessert that has become a favorite. the recipe is super easy to follow.

Disney Foodie Fare ~ Tonga Toast

It's Foodie Fare Friday and we're focused on the magic of a Disney recipe from The Polynesian's Kona Cafe at The Walt Disney World Resort. 
When I think of The Kona Cafe I think of their coffee, it is the best authentic Kona Coffee and the famous Tonga Toast. 

Warning! If you choose the Tonga Toast, you better be hungry. It is very filling! There are more than enough carbs to last you awhile and you may have a sugar rush. I like to split Tonga Toast with my husband or son. Even splitting one serving will hold me over till lunch time and more.


Kona Cafe is not the only restaurant on property that offers Tonga Toast. The Rainforest Cafe has it on their menu but from what I've heard it doesn't come close to the Kona Cafe recipe. 
The recipe below is very easy to follow and I've included a video that I wish had a scratch and sniff button because it looks like it smells delicious.

Chocolate “Lava” Cake~California Grill, Disney’s Contemporary Resort Recipe

One of my favorite desserts is the Chocolate “Lava” Cake found at California Grill at Disney’s Contemporary Resort.

Disneyland Resort has revved up their engines for the Cars Land. Thanks to Disneyland InsidEARS Community Manager, Kelly we have a special InsidEARS taste from Flo’s V-8 Cafe, one of the Disney dining locations in the new land. Enjoy this “Route 66” classic take on strawberry-rhubarb pie.

Blue Glow-tini Recipe

    If you have visited one of the lounges at Walt Disney World Resort or Disneyland Resort you might have seen the attention-demanding martini that glows, the appropriately named “Blue Glow-tini.” The drink radiates soft blue (and you get to take home the fun, glowing ice cube). Whether you have a glowing ice cube from Disney Parks or not, don’t let that stop you from making this well-known (and tasty) drink at home.

Blue Glow-tini
Serves 1
Ingredients:
1 oz Skyy Infusions Citrus Vodka
1/2 oz BOLS Peach Schnapps
1/2 oz BOLS Blue Curacao
1 oz sweet and sour mix
1/2 oz pineapple juice
1 Glow Cube set on blue color
Mix and serve in a 7.5 oz martini glass with a sugared rim

Disney Trader Sam’s Schweitzer Falls Cocktail Recipe





Disney InsidEARS Recipe: Refreshing Drink from Trader Sam’s-Enchanted Tiki Bar




How about a refreshing drink from Trader Sam’s―Enchanted Tiki Bar to cool you off in preparation for spring break? If you can’t get to the tropics, bring the tropics home to friends and family with this fun drink recipe for Trader Sam’s Schweitzer Falls non-alcoholic cocktail. Enjoy! 





               
 Schweitzer Falls (Non-Alcoholic)


4 ounces Sam’s “Gorilla Grog” (a blend of pineapple, orange, guava, and passion fruit juices, fresh lemon juice, and falernum*)
4 ounces Sprite
Maraschino cherry, for garnish
Pineapple wedge, for garnish
Mint sprig, for garnish
  1. Build in a Collins glass over ice, roll into mixing tin, and back into glass.
  2. Garnish with maraschino cherry, pineapple, and mint.
* Falernum is a sweet syrup used in Caribbean and tropical drinks. It contains flavors of almond, ginger and/or cloves, and lime, and sometimes vanilla or allspice.
