Dumbo Inspired Peanut Butter and Jelly Popcorn Balls Recipe

Today's Food Favorite post and the recipe is inspired by Dumbo the Flying Elephant. Recently I was delighted to receive a contest prize from Sean at Disney Day by Day of an adorable plush Dumbo. There he is pictured above. Isn't he sweet?

Dumbo reminded me of the popcorn at 
Maurice's Amazing Popping Machine in New Fantasyland. You can get popcorn just about anywhere in Walt Disney World but not in Dumbo souvenir buckets from this magically themed popping machine cart. 

I really wanted to taste the popcorn but we were in a bit of a rush and thought it might spoil our appetites so we deferred for another day which never happened. Silly decision and lesson learned. Just like Dumbo I needed a Timothy in my hat that day. Never put off Disney snacks for later. Eat now or forever hold your peace or peas as my son used to say.

Dumbo also inspired me to find a healthy fun snack to enjoy right at home that was slightly different than just popping corn. I found this great recipe for DIY Dumbo's Peanut Butter and Jelly Popcorn Balls on a stick from Disney's Magic of Healthy Living

Dumbo Inspired Peanut butter and Jelly Popcorn Balls Recipe

Ingredients:

• 4 cups popcorn

• ½ cup no sugar added peanut butter

• ¼ cup no sugar added strawberry jelly

• 3 tbsp honey

• 1 tbsp vegetable oil, optional

• 1 tsp water

• ¼ tsp salt

• 8 sticks

Cooking Instructions:

1. Cook popcorn in your favorite popcorn maker or buy low sodium popcorn and place in a large bowl.

2. In a saucepan over medium heat, combine the peanut butter, honey and salt. Cook the mixture for 2-3 minutes constantly stirring until it becomes liquefied. Remove from heat and let the mixture cool for a few minutes until it starts to become sticky.

3. Pour the peanut butter mixture over the popcorn and use a spoon to combine if the mixture is too hot.

4. When cool enough to touch, form 8 balls with your hands or use an ice cream scoop. Give each ball a squeeze to keep them from falling apart while the mixture sets. Place balls on a parchment-lined baking sheet.

5. Add sticks to your popcorn balls.

6. Thin your favorite no sugar added jelly out with water and drizzle over the popcorn balls. Enjoy!
