Liberty Tree Tavern ~ Apple Cobbler

Since it's fall and the Food & Wine Festival is going on right now in Epcot, I thought I'd share a dessert that's been on my mind a lot lately. The warm Apple Cobbler from The Liberty Tree Tavern in The Magic Kingdom. It is most definitely a happy food! Pictures below is the way Liberty Tree Tavern serves this recipe. Large scoops of vanilla ice cream almost melting, next to the apple cobbler. If you ask them for the recipe it will include a cream cheese filling (as seen here on AllEars) which I find interesting since it's served this way. Personally I like it without cream cheese.

Magic Kingdom, Liberty Tree Tavern ~ Apple Cobbler

Preheat oven to 300º degrees.

Pie Crust Dough:
3 ½ cups all purpose flour
2 tablespoons sugar
1 teaspoon salt
2 sticks unsalted butter cut into ¼ inch pieces
4 tablespoons Crisco (or substitute: margarine (1 cup shortening = 1 cup + 2 tablespoons margarine)

Sift the flour, sugar, and salt into a large bowl. Using your fingers (I cut it in with a pastry knife) work in the butter and shortening until the mixture resembles coarse crumbs. Add 2 tablespoons ice water and work with your fingers until the water is incorporated and the dough comes together. Add more water if needed.

Spray the inside of a 9x13x2 inch glass or ceramic baking dish with a
non-stick coating (I use Baker's Joy). Roll out pie dough on a lightly floured surface (I use a cold marble slab) and line the baking dish with dough (as for an apple pie)

Apple Filling:
4 pounds Baking Apples – Golden Delicious
½ cup Sugar
1 ½ cups Brown sugar
½ teaspoon Nutmeg – ground
½ cup Flour

Sift dry ingredients together. Put apples in a small saucepan and cook
over medium heat for 2-3 minutes. Add dry ingredients and cook until
apples are soft and ingredients are thoroughly mixed. Remove apples
from heat and chill thoroughly. Place cooled apple filling into dish.

Oatmeal Streusel:
¾ cup All –purpose flour
½ teaspoon Cinnamon – ground
½ cup Brown Sugar – packed
¾ cup Rolled Oats
½ cup Butter – Unsalted

Spread streusel mixture evenly over top of apple mixture.
Bake in center of oven for 1 hour and 15 minutes. Serve with vanilla ice cream.

This week's theme:

There are so many wonderful Disney face characters but Snow White is my favorite princess and this particular shot is my favorite of her.
Here Snow White and her Prince are completely in character as they float through the Magic Kingdom with their music playing waving to their adoring fans...

Tigger-ific Photo Tip Tuesday

Yesterday, I had the honor and privilege of being interviewed by my friend Disney Donna Kay for  Mentoring Mondays. You can read it in full here

During the interview I mentioned a few tips that I think may be helpful to new camera owners. One of those was The PhotoBert CheatSheet. I thought I should explore them a little further as I think they are a useful tool for anyone with a new *high functioning* digital camera.

Tigger-ific Tip Tuesday Focused on the Magic
What is it and why would I want one?
PhotoBert Cheatsheets are inexpensive laminated quick and easy pocket guides designed for every model of digital camera. Each card is double sided and broken down into categories such as exposure modes, custom settings, bracketing, focus options to name a few. Because it's folds down to the size of a legal envelope, it easily slips into a side pocket of a camera bag. They are an inexpensive handy guide for those moments when you're in the parks or out in the field and you need a quick answer.
I'll leave it to PhotoBert to tell you more:

You can order PhotoBert Cheatsheets directly from the website , ebay or Amazon. Prices range from $4.95-$12.95 plus shipping.

Mentoring Mondays with Disney Donna Kay

Today I’m the featured blogger in Disney Donna Kay’s Mentoring Monday’s Series. If you haven’t visited Disney Donna Kay’s blog lately, you really should. Each Monday she interviews a blogger from The Disney Online Community asking them insightful questions about their blogs. In my case the questions were primarily about photography.

Flashback Friday~ Cowabunga Dude!

It's time for Flashback Friday! Time to focus on our favorite Disney memories from the past. This week we discovered (unearthed) more old photos and ephemera from Walt Disney World circa 1991. Teenage Mutant Ninja Turtles were all the rage at MGM's backlot.

The pizza-eating Leonardo, Michaelangelo, Donatello and Rafael would arrive in their Turtle Party Wagon with their news reporter friend April O'Neil.

Kids oozing with enthusiasm to meet their "heroes in a half shell" first watched a live stage show full of karate moves and gymnastics and then were treated to a meet and greet by each of the TMNT. Very heady stuff for the kids
as they really were the super heroes of the time.

My son had a great time with each of the TMNT signing autographs and playing around with them and made many happy memories. It's always fun to look back each Friday.

Thanks for stopping by.
I hope you are having a Disney Day!

I know what you're thinking. You saw this posted on the Magical Blogorail Loop. Sorry, but I really love the architecture of The Temple of Heaven in the China Pavilion and I especially love it at night with the shadows and lights reflecting in the serene waters of the pond.

Focused on the Magic

Have a Magical Day,

Favorite World Showcase Pavilion

The World Showcase is the best part of Epcot for me. I love that I can tour the world (11 countries of it) in an afternoon experiencing foreign cultures and dining on exotic cuisine. Each pavilion is a unique experience and tough to compare. Picking one favorite is sort of like choosing a favorite dessert. It depends quite a bit on my mood.

While I was writing a post last week, Epcot's Hidden Treasures, I realized just how much I enjoy visiting The China Pavilion. The atmosphere, art, cuisine, culture and beautiful architecture intrigues me and one day I hope to visit the real China - Ni hao (nee HOW)

The China Pavilion opened with Epcot in 1982. Since then guests have entered the pavilion through a large classic Paifang gate. This gate is beautiful to look at during the daytime with it's elaborate design, but at night during Illuminations with the fireworks bursting behind it, it glows.

When you walk into the pavilion you will notice the The Hall of Prayer for Good Harvest in the center with Chinese garden waterscapes surrounding it creating a serene and peaceful atmosphere. It's so nice to just relax and take in the scenery and atmosphere.
Attractions: The centerpiece of the pavilion is the three-tiered, circular Temple of Heaven which is a one-half scale reproduction of the original, built in 1420, during the Ming dynasty. It was visited annually by the Ming and Qing emperors to pray to the God of Heaven for good harvests inside the Hall of Prayer for Good Harvest.

Each pillar represents a season. The blue tiles represent the sky and green the earth. The acoustics inside the dome are amazing. If you stand in the center (there's a cobble stone placed there) you can hear whispering throughout the room and hear yourself as others would hear you.

Reflections of China is a movie presentation about China, it's people, cities and countryside that is projected on 9 screens in a panorama giving guest a 360º viewing experience. Circle-Vision 360 is breathtaking as you soar to the Forbidden City and the Great Wall of China.

In 2006 the Tomb Warriors: Guardian Spirits of Ancient China exhibit in The House of the Whispering Willows gallery was added to The China Pavilion.

The exhibit is a display of Chinese burial art. The Tomb Warriors are scaled versions of those found in the first Emperor's tomb that dates back 2,000 years.

Dining:
There are two dining locations in The China Pavilion. Nine Dragons is a table service restaurant that I really enjoy. The menu is here, thanks to AllEars.
We've always been very pleased with the service and food. The price is right too! Especially the Tsingtao Beer!!!
The Lotus Blossom Cafe is and indoor/outdoor counter serve restaurant. You can find the menu here, again thanks to AllEars. I enjoy the food here and sitting outside in the courtyard looking down the walkway you really feel like you're in China. Try the Pot Stickers!!!

Shopping:
I enjoy strolling leisurely, taking pictures enjoying the atmosphere but I also like to shop at
The Yong Feng Shangdian ("Bountiful Harvest") gallery. I love browsing the fine silk robes and genuine Chinese jade figurines, rosewood furniture, rugs, clothing, silk items, toys and collectibles. I always find interesting  souvenirs to bring home.

Entertainment:
The China Pavilion was host to a music video which I posted here.

The Dragon Legend Acrobats - These young students of the Pu Yang school acrobatic perform gravity defying feats with plates tables chairs and each other. Perfectly choreographed and precisely synchronized. Unfortunately, I understand they may not be entertaining in the World Showcase in the future. I hope I'm wrong. They are amazing!

Magical Memories ~ Resort TV 2001

Today our Magical Memories take us back, way back to the 100 Years of Magic celebration in Walt Disney World, 2001 and the resort TV commercials. Do you remember The Yellow Shirt Guy and Park Hopper?  Together they brought guests all the latest park information to make it a Zip A Dee Do Da Day...

Part 1

Part 2

2001 Part 3 Downtown Disney

I really liked the toon look to these commercials and the excitement they created. I know we were always enjoyed watching them in our resort while unpacking or getting ready for the day.
